Tokhum-e-Kabuli

(Kabul-style eggs w/ tomatoes, onions + garlic)

Scale recipe depending on guests, 2 eggs per guest

Ingredients: 

  • 2 eggs per guest

  • 1 tomato (diced)

  • ½ onion (diced)

  • ½ clove garlic (thin sliced)

  • ½ fresh green chili (thin sliced) (optional depending on desired spiciness)

  • ½ C cilantro / coriander (washed and finally chopped) (optional)

  • Salt

  • Pepper

  • 1.5 t vegetable oil (preferably rape seed / canola)

Preparation:

  1. Pour oil in pan, saute onions and garlic on medium-high heat, seasoning w/ salt and pepper until onions become golden brown.

  2. Add all the tomatoes to the pan with onions and garlic, season mildly and stir. If using chilies add them to tomatoes.

  3. Create wells in base of pan for eggs to make pan contact. Crack eggs in wells and lower heat to .medium-low

  4. Let eggs cook in tomato base for 3-5m, cover pan until eggs done as desired (soft to hard yolk).

  5. Garnish with cilantro and serve with naan or lauvash.
