Salata-e-Kabuli
(Tomato, cucumber, onion & cilantro salad)
Serves 4-6
Ingredients:
4-6 medium tomatoes (chopped into ¼-½ inch cubes)
½ cucumber (chopped into ¼-½ inch cubes)
½ medium onion (diced)
¼-½ clove garlic (finely diced)
¼-½ C cilantro / coriander (washed and chopped)
1-2 T lemon juice (depending on desired zest)
Salt
Pepper
1-2 T vegetable oil (preferably rape seed / canola)
Optional: ¼-½ t fresh green chili (seeded and thin sliced crosswise) (optional depending on desired spiciness)
Preparation:
Create dressing by mixing lemon juice and oil in small bowl and adding some salt and pepper to taste. If using chilies add them to dressing as well and mix.
Mix all vegetables together in salad bowl.
Add dressing and gently toss into vegetables. Season with additional salt and pepper as desired.
Serve salad onto large shallow serving plate.
Serve and enjoy!
